I don’t know how long it has been since I shared our menu plans here, but I know it has been MONTHS. Why did I stop? No idea … laziness, maybe? Wondering if anyone cared to see them?
Well, I’m sharing them again and the main reason for reviving Meal Planning Monday is personal convenience. It is SO much easier to head over here to see what I’ve planned and get any recipe links … much, much easier than writing it all down or printing things out.
With three kids, a dog, two fish and a husband, I’m all about convenience.
Plus, we’ve challenged ourself this month by eliminating ALL eating out/ordering in during Lent. Yup. No quick Starbucks trips … no eating out after Church … no “Oh, let’s just order Pizza” on those evenings when I’m worn out from keeping Kidlets alive and not screaming.
(the moms of toddlers and preschoolers get it)
Meal planning has become more crucial than ever during this time of Lent … to stick to our goal, I have to know what we’re going to eat and have everything ready to go for dinner.
Something new I’m trying this week is the idea notion of prepping every meal at the beginning of the week, saving yourself time in the kitchen each day and keeping you from burning out at the end of day and choosing unhealthy options. Prepping/cutting all of my vegetables ahead of time isn’t new for me, but getting EVERY meal ready to go is definintely new.
Laura, creator of Momables (a kid lunch menu-planning site/service), recently shared her plan of attack on Huffington when she showed the inside of her fridge.

First of all, yeah — CLEANEST FRIDGE EVER!!!!!!! But, her main point was to show how she spends time on Sundays getting every dinner and lunch ready to go and properly stored. It’s the most organized, radical notion I’ve ever seen.
And I’m going to try it this week. Will it really work? I’ll let you know next week!
What We Are Eating This Week
- Monday: Leftover Spaghetti with Slow-Cooker Spaghetti Sauce, Salad and homemade Balsamic Vinaigrette.
- Tuesday: Rotisserie Chicken, Strawberry-Corn Salad (a Momables recipe that will also be used for Kidlet lunches)
- Wednesday: Slow-Cooker Cube Steaks, Potatoes, Salad
- Thursday: Roasted Thai Chicken Drumsticks (a new recipe I’m working on). Peanut Butter Udon Noodles with Snow Peas
- Friday: Grilled Cheddar Jalapeno Beef Burgers, Seasoned Sweet Potato Fries, Salad
- Saturday: Leftovers
- Sunday: Curried Chicken Sliders, Salad, Crudite
Do you prep ahead of time? Any tips?

My name is Rachel -- I share tales about food and family. I'm a home-cook who focuses on fresh & simple meals to both fuel us and to help us celebrate our family-life. My day starts with coffee. Lots of coffee.

Monday - Corn Casserole, Pepper Steak, Salad
Tuesday -

I want to be this organized. Probably is more healthy and saves money.
I don’t prepare as much as I should. I am starting to take it more one day at a time.
I don’t prep, but I do plan and usually stick with it!
“Cleanest fridge ever” was the first thing I thought too!
I don’t really prep ahead of time but I do meal plan. Tonight we’re having Pesto Ranch chicken from the slow cooker and later this week we’ll be having meatball sandwiches.
The most prep I ever do, is perhaps cooking more meat than I need to serve me for another recipe later in the week. Mind you I don’t have 3 young kids underfoot, so getting things ready an hour before we eat or so isn’t really a big deal for me.
I wish I was that organized
I seriously need to meal plan…I feel like I’m sort of getting some order here, but not really
I wish my fridge looked like that!
I’ve always enjoyed your menus. Perhaps you’ll motivate me to start meal planning again.
Blessings!
I do not plan ahead, even though I tell myself nearly everyday that I am going to plan.
Shoot, I do it all last minute but then again, I’m on my own so I can do it all easy like that.
I so wish I was organized enough to do meal plans. And, I wish our lives were so crazy that we had meals at set times (at least most days).
I saw that post but I didn’t know you could wash fruit and then refrigerate it. I’ve always washed it right before we ate it.
I’m trying to get better about meal planning…I go through phases. One week I will go to the grocery store and buy everything I need to cook homemade dinners all week long…then the next week I end up doing pizza, Chinese, etc because I just don’t feel like cooking. LOL
I need to get better at dinner ideas. I’m in a slump
I need to prep ahead of time, I just never do.
This is something I need to start doing.
Starting next week!
Wow, I wish you luck on no eating out! Even on my diet, we still do take out and that would be TOUGH.
Yum! We did Chinese Chicken Drumsticks last week – it was super yummy!
If I could just sit down and plan like this my life would be a lot less stressful maybe I can do that this weekend, would be a good goal.
I don’t plan too far ahead but I am trying to. I want to start a weekly meal plan too!
Yeah, her fridge is immaculate! Mine on the other hand .. lol
My husband keeps asking me to meal plan for the week, but I’m just too scatter brained to do so.
I wish that my fridge was that organized!
I have been meaning to try prepping ahead but I haven’t yet. It’s such a good idea though!
Sounds like a delicious week, especially the curried chicken sliders.
I so have to plan my meals for the week. thanks for sharing.
WOW Ur fridge is ORganized
I want to get this organized.
I really need to be more consistant with planning.
