Since I became a Mamavation Mom (by the way, did you see the Better Body after Baby article on the Yahoo front-page yesterday? The first story was about Leah, my mentor and boss during my Mamavation Bootcamp), I have tried to keep my family’s eating habits on the healthy side . . . without sacrificing our love of flavor.

Yup — we’re a bunch of wanna-be foodies around here.

When I started focusing on healthier cooking, I worried that it would be next to impossible to create delicious AND healthy meals.

(chuckle)

I’ve learned there is NO reason to have worried about that.  In fact, Hubby and I have learned that we enjoy our food more now that it’s not slathered in heavy creams and cooked in lots of grease.

Go figure.

Here is our meal plan for this week — good, easy dishes that satisfy everyone!

Monday

Smoked Turkey Panini, Salad w/ balsamic vinaigrette

Tuesday

Grilled low-fat Beef hot dogs, grilled veggies, Sweet Potato Fries.

Wednesday

Black Bean Quesadillas on whole wheat tortillas, Mexi-Spinach Salad with Mango Pico de Gallo

Thursday

Mini Greek Pizza Muffins with ground Turkey (leftovers to be used for school/work lunches)

Friday

Rotisserie Chicken and Spinach Caprese Salad

One of our favorite meals is fajitas. HEB is one of the only places in our area that carries skirt steak. Secret marinade is Newman’s italian dressing.

We love to make our own version of stir fry.

Flank steak, chicken, shrimp, brocolli, fresh green beans, carrots, onions, garlic, mushrooms, soy sauce. Don’t have the exact measurements but we mix all the stuff together and mmmmm yummy. We put it on top of some steamed white rice…and our tummies are nice and full :)

My family’s favorite meal is pizza and spaghetti. I use the Ronzoni Smart Taste paste that’s healthier and we sometimes make our own fresh sauce from garden tomatoes. I also add fresh basil from my herb garden. For the pizza, I use whole wheat pitas, fresh spinach leaves, fresh mushrooms, tomatoes, black, olives, etc.

The one meal I can get the WHOLE family to eat is tacos. I make them healthier by using ground turkey meat and I make my own taco seasoning so I can control the salt content. Load them up with veggies too!

We, and by “we” I mean “I”, love to make pasta. If I do make a meat sauce, I prefer only to use ground sirloin, which is lower in fat. Lately, though, I’ve been using chicken, which we all know is less fattening than beef. I prefer gluten-free pasta, which is usually made from rice, and I always prefer canola oil, which is low in saturated fats and high in healthy unsaturated fats like omega-3, omega-6, and ALA. All good for blood pressure and cholesteral.

And can I say YUM! You have a HUGE knack for making bad food healthy. That hot dog sounds amazing. I want you to come to my house and be my private chef. I LOVE grilled veggies and hot dogs. :) My hubby would probably even eat that and he’s not a veggie fan.

Our favorite family meal is Spaghetti and Bacon. You use a 12oz package of spaghetti, 12 oz package of Bacon sliced into small pieces, one medium white onion diced, salt, italian sesoning, 1tsp chopped garlic, grated parmesen cheese, 6 eggs beaten. Cook spaghetti, drain and set aside. Cook bacon, onion, and garlic in a large pan until bacon is crisp. Drain all but 1 tbsp fat from pan, add spaghetti, eggs, cheese, and seasonings to the pan. Fry until the eggs are cooked and you have a meal the whole family will love!

One of our favorite meals is a casserole made with whole wheat pasta, pepperoni, spaghetti sauce and lowfat mozzarella cheese along with a strawberry (cranberry) and spinach salad, grilled corn and garlic bread. I make a large amount of everything because I feed eight boys and a husband and normally there’s no leftovers. (Cook the pasta until it is nearly done; drain it. Heat the sauce and add the pepperoni at the end. Pour the sauce and pepperoni over the pasta. Fold it together and put all of it in a casserole dish, cover the top with mozzarella cheese and put in the oven at 350 degrees until the cheese is melted and sides are bubbling.)

I think our favorite meal is pasta. Pasta salad, spaghetti, mac & Cheese.

I make them healthier by using WW pasta, lots of veggies (be they seen or hidden in the sauce)
