I have to admit, with the Texans firmly (very firmly) out of the Superbowl, I don’t have a whole lot of interest in watching the game.
Yes, I’m that bitter.
But, there’s till the promise of funny commercials, fly-overs, and Beyonce and her big hair singing old hits with her Destiny’s Child compadres.
“I’m a survivor! I’m not gonna give-up!”
(Oh, don’t judge — you know you sang along too.)
And, of course, there is still the food, right? Superbowl food — appetizers, snacks, desserts, chili — is the BEST.
While I have my main course selected (why, hello, “Southwestern Roasted Pepper and Chicken Stew“), I still want one or two more snacky type things. And, on that note, let’s talk about Boar’s Head.
If you don’t know Boar’s Head premium deli meats and cheeses, you are missing out; aside from milk and bread, their Vermont White Cheddar, EverRoast Chicken, and Pepperoni are on my grocery list every. single. week. There is absolutely nothing better in the grocery store deli than their products… well, I haven’t tried the Head Cheese. I’ve balked at that. But everything else? Pure awesome.
As I prepare for the Super Bowl, I went through their appetizer recipes and found (more than) a few recipes that have me wishing it was already February 3rd. I need these foods. NOW.
Easy Appetizers for Game Day Snacking
EverRoast Bruschetta — in 15 minutes, you have a full flavored and filling appetizer for your hungry Super-Bowl watching friends.
My husband loves empanadas and these Chicken Empanadas, full of chicken and pepper-jack cheese. The hardest thing about this recipe will be cutting circles out of a refrigerated pie crust.
Want a 1-ingredient recipe that will make you look like a gourmet chef? Try these Parmesan Crisps. With just a bit of grated Parmesan and a few minutes in the oven, your guests will be munching on delicate, cheesy goodness.
Another easy recipe is this Brown Sugar and Spice Glazed Cream Cheese. You don’t have to mix anything or even turn on your oven for this one.
One of favorite snacks EVER has always been Roasted (or grilled) Jalapeño Poppers. These Chipotle Chicken Stuffed Peppers offer a new twist on my old favorite. Can’t wait to try them!
And, we can’t forget about good ol’ Spicy Potato Skins. Doesn’t everyone like these?
