I’ve spent the past week in Oklahoma — driving to and from Texas and Oklahoma (with the Kidlets) and leaving the Husband at home. It’s been a crazy time of doting aunts and excited cousins and smiling grandparents and the beautiful landscape of my childhood.
But, now our visit is over and tomorrow we return home … just in time to head out (again) for a work conference.
THIS time, I’ll be sans children and the Husband will be left to handle the bath-time and bed-time and, obviously, dinner-time.
(I’m only laughing a little bit at the thought of this whole scenario)
I know he can handle bathing three squirming children and I’m confident they’ll sleep (eventually). But cooking a healthy meal while three Kidlets transform into shrieking banshees, demanding to be fed at the snap of their fingers? Um …..
This week’s meal plan has a simple theme: it is all about “What Can The Husband Handle Without Involving Take-Out Every Night.”
Thanks to my freezer stash, the majority of his “cooking” will revolve around heating components of each meal; surely … surely … my guy can handle this!!

Monday — Perfect Cheesy Scrambled Eggs, Fresh Fruit, Whole Wheat Toast
Tuesday — Cheese and Chicken Quesadillas, Slow Cooker “Refried” Black Beans, Fresh Veggies
Wednesday — Whole Wheat Pasta, Slow-Cooker Spaghetti Sauce and Meatballs, Steamed Green Beans, Watermelon
Thursday — Grilled Turkey and Cheese Sandwiches, Fresh Veggies
Friday (Mama is back!) — Perfect Whole Wheat Pizza with Roasted Veggies
Saturday — Chicken Spaghetti with Lemon-Tarragon Sauce, Salad
Sunday — leftovers!
