This was a week of adventure: healthy menu-planning, fooling my husband with Butternut Squash, and expanding my palette with wheat germ.
That’s right — wheat germ.
In this week’s Mamavation Vlog, you get to see the results of these foodie adventures . . . the good, the bad, and the ugly.
First up is my take on @notdiyheather’s “Healthified Macaroni and Cheese.” I tweaked her recipe just a bit, omitting the butter and using 2 cups of butternut squash puree (some of the ginormous batch I made for my baby . . . right before he decided he would NEVER eat purees). By the way, this was a HUGE hit with my kiddos — the squash melded perfectly with the cheese and didn’t overpower the traditional flavor of the dish.
Then, you get to see me make (and eat) one of @drmary14’s breakfast recipes: low-fat yogurt, berries, and WHEAT GERM! It was my first time to try the wheat germ . . . wow. That’s all I can say.
