Easy Broccoli Salad Recipe

Don’t hate me, but I have a child who ADORES broccoli.

Seriously.

It’s her favorite vegetable and her number one preference when given a choice for dinner vegetables.  Because it’s such a highly nutritious green veggie, I try to humor her with broccoli several times a week.

The only problem is that Mommy and Daddy get bored with alternating steamed and roasted broccoli.

Last night, as I stared down a crown of broccoli in my fridge, I wracked my brain for a simple way to prepare it.  A way that wouldn’t take long and . . . well, heck, wouldn’t take any cooking!

Easy Broccoli Salad is what I came up with . . . and what I’m calling it.  Yeah, I could give it a fancier, more unique name but I’m pregnant and tired.

(it’s a legitimate excuse, believe me)

The child LOVED IT.  Ate seconds.  And then ate the salad again for lunch today.

Can I get a woot?

(plus for my “Little” Lady, this salad has healthy oils/fats in it…. something her pediatrician wants us to push with our petite one.)

Easy Broccoli Salad

Ingredients

  1. 1-2 crowns of broccoli, washed chopped into bite sized pieces
  2. 1/4 cup of chopped walnuts
  3. 1/3 cup of chopped strawberries
  4. 1/4-1/3 cup of Balsamic Dressing (see below)
  5. 2 cups of Baby Spinach (optional)

Instructions

  1. Add the chopped broccoli, walnuts and strawberries in a large salad bowl and toss with the Balsamic Dressing (using more or less to taste).
  2. Serve as is or chill and serve.
  3. If desired, you may also add baby spinach to the salad, tossing well.

Balsamic Dressing

(this is our “go-to” dressing for salads; love it!)

  • 3 parts Olive Oil
  • 1 part Balsamic Vinegar (or more if you like a more vinegary flavor)
  • 1 TB sugar or honey (or more for a sweeter flavor)

Add all ingredients in a bowl and whisk vigorously until emulsified. Store in an air tight container or dressing jar/bottle. The dressing will separate after 10-15 minutes, so you’ll need to swirl (or shake it if you have it in a TRULY safe, airtight container) it to reincorporate the ingredients.
