With the Easter holiday this weekend, this is an odd, short week for our household. We’ll be spending the majority of the week with out-of-state family and I’d rather NOT make a big grocery trip just for a few days of meals.
Not. Gonna. Do. It.
So, the next couple of days are all about using what I have on hand in the freezer, fridge, and pantry.
Simple plan. I get to use up random ingredients. Plus, no shopping trip for Mama.
I LIKE it.
Monday: Gluten Free Sesame Chicken with Broccoli (held-over from last week)
Tuesday: Chicken Fajita Tacos (this is a recipe from one of my fellow greater-Houston area bloggers … sound soooo good!), homemade whole-wheat tortillas, homemade Refried Beans
Wednesday: Turkey Pie with Spinach and Mushrooms (this is another new meal for me, suggested by another greater-Houston area blogger – @DoubleClickTech — after I sent out a tweet asking for ideas using these three main ingredients. If it turns out well, I’ll share the recipe), Salad and Vinaigrette.
Thursday: leftovers!
Friday – Sunday: a festival of indulgence, thanks to my Mama . . . who has been taking our requests for the past two weeks. I can’t WAIT for her cooking — she is the BEST home-chef and baker. YUM!!!!
(I’m hoping for homemade biscuits and gravy . . . a moist Easter ham, and one of the AMAZING desserts I’ve been sending her via Facebook . . . this preggo has a sweet tooth lately!)
