A Belated Meal Plan {Grain Free Meal Plan 3-31-14}

It’s finally over, this long, sickly, sloooooow month of March.  Yes, sickly — all month long I have fought some kind of cruddy virus … one today that I was told morphed into a sinus infection.

Woo hoo for me.  Woo stinkin’ hoo.

But, armed with antibiotics and nasal sprays, I’m ready to beat this junk down.  Bring on some healthy breezes, m’kay April????

Regardless of a sick Mama, life goes on  and I have to figure out what to feed this family o’ mine.  And, since the Mushroom Makeover (ad) also goes on, I have to keep up with the parameters of this healthy living challenge.

Mushrooms, mushrooms, mushrooms.  As always, they make an appearance on this week’s meal plan but in new ways — no repeats for me!!!!

The Home Stretch

As far as the challenge goes, we’re entering the home-stretch … week four.  The food part of this challenge — incorporating mushrooms into four meals a week — has been easy.  It’s simply crazy how well mushrooms fit into nearly type of cooking: grilled, roasted, sautéed … Italian food, Mexican, Asian, or American.  No, the mushroom part of life has been easy.

Having energy to workout has been more difficult.  Most of the month, I have just gone through the motions, stopping periodically to cough and wheeze.  But, once my lovely antibiotics do their thing, I hope to finish strong in the last week — get back (with full strength and energy) into the workout plan that was given to all of us in the challenge.

This Week’s Plan

Dinners

  • Monday: Grain-Free Dutch Babies with Fruit
  • Tuesday: Chipotle Grilled Cheese Club Waffle-wiches (new recipe), Tomato-Basil Salad
  • Wednesday: Leftovers
  • Thursday: Slow-Cooker Teriyaki Portobellos (new recipe), Cauliflower Rice
  • Friday: Homemade Pizza Night
  • Saturday: Smoky Mushroom Soup (new recipe), Salad
  • Sunday:  Slow-Cooker Whole Chicken & Cremini Mushrooms

Lunches

  • Monday: Pizzadillas and Marinara, Veggies, Strawberries
  • Tuesday: Bacon Frittata Cups, Fruit, Whole-Milk yogurt
  • Wednesday: Hummus and Lentil Chips, Caprese Salad, Apple Wedges
  • Thursday: Apple-Almond Butter Sandwiches, Lentil Chips, Carrots and Peas with Homemade Ranch
  • Friday:  Egg Salad, Veggies & Ranch, Banana, Trail-Mix

Breakfasts
  • Yogurt
  • Oatmeal (we have introduced gluten free oatmeal back into the kids diet — the Little Lady is able to tolerate it)
  • Egg-Mushroom Scramble
  • Fried Eggs with Bacon, Avocado and Tomatoes
