My inlaws will be staying with us this week (hip, hip, hooray for reinforcements!!) and I’ve decided that we will use this last full week of August to revisit and enjoy some of our favorite meals of the Summer. The best thing about these recipes is that they are not only scrumptious but healthy! (and, in case you need further endorsements . . . The Little Lady and Mr. Boy both gobbled each of these main dishes UP!)

I’m going to modify the original recipe; nothing too radical, but I do want to add a few ingredients that were missing. I’ll let you know how it turns out and will share the updated recipe if it’s as good as I think it will be!)
