For the past few weeks, I have been *so good* about taking time on the weekends to prep food for the week ahead. I’ve washed fruit, baked breakfast muffins, grilled chicken, and packed lunches … everything (breakfast, lunch and dinner) ready to go for Monday morning.
This weekend?????
Yeah. I didn’t feel like it, so … I didn’t.
I blame the weather. Monstrous thunder-storms. Torrential downpour. A Texas cold-front. I just wanted to drape myself in the cozy scarves that have been packed away all summer, drink Pumpkin Spice Lattes, and break out the fall decorations.
So, I did.
Then, instead of going to the grocery store, I spent time at Target, planning our annual Pumpkin Patch Pictures. Coordinating Kidlet outfits are very, very, very important you know. And stumbling upon matching plaid shirts and overalls?
Well, a Mama just can’t pass up an opportunity like that!
But, after a lazy Sunday afternoon of church, lunch, and discovering Mr. Boy had used his Sunday Tie as a tail …
I decided it was time to get SOMETHING done before Monday rolled around. After a nap (’cause, you know, watching the Husband watch the Texans lose is really, really, really draining), I finally opened Evernote and started planning our meals for the week. I even managed to squeeze in a trip to the grocery store.
Sometimes, breaks are good for Mamas. And for this Mama, a break full of decorating, cute little boys in overalls, and family time was very, very, very good.
What We’re Eating This Week
Breakfast:
- DIY Apple Cinnamon Almond Oatmeal
- Whole Wheat Pancake-Muffins & Fruit
- Smoothies
- Pumpkin-Pistachio Muffins
Kidlet Lunches:
- Monday: Leftover Spaghetti in a Thermos, with a side of Grapes and Carrots
- Tuesday: Almond Butter & Jelly Uncrustables; Pretzels; Fruit; Carrots; Cheese
- Wednesday: Homemade Chicken Nuggets & Ketchup; Veggies; Applesauce
- Thursday: Homemade Lunchable: Turkey & Ham Rolls; Cheese; Crackers; Grapes; Veggies
- Friday: Peanut Butter & Jelly Uncrustable; Clementine; Peppers & Homemade Cool Ranch Dip, Pretzels
Snacks:
- Popcorn & Trail Mix
- Fruit
- Salsa and Oven-Baked Tortilla Chips
- Muffins
Dinner:
psssst…. did you notice that Beef and Broccoli is on the menu AGAIN??? Well, the nice thing about having freezer meals on the meal plan is that they can easily get moved around when you realize your very loyal kindergartener has a “Mommy we HAVE to go” Spirit Night at Chic-Fil-A.
Man! I have some cute kidlets.
